Bikini Recipe

Serves 10 guests

To make the Citrus Syrup (produces 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (yields 850ml, enough for 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
Fresh cranberries, to garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Combine the listed components into a pot, heat until it reaches a gentle boil, agitating until the sugar dissolves. Next, turn off the burner allowing it to cool entirely. Transfer into a sterilised bottle, close it keeping it chilled, it can be stored for about one month.

Preparing the Batch Mix: Mix every spirits and syrup in a large bottle, let it rest for one hour, then strain best through cheesecloth, to ensure it's fully clarified.

When ready to serve: Pour 85ml from the batch mix to a cocktail shaker containing ice, gently stirring carefully for about 60 seconds to chill. Strain into a frosted cocktail glass or similar, top with the cranberries and complete it with a quick spritz of the essential oil over the drink.
